MEXICAN QUINOA

Healthy, nutritious and wonderfully light for your belly.

This delicious recipe is so yummy! You know what’s even better? The cleanup is so easy, because you only need one pan! 🤗

This Mexican dish has a healthy twist, just by adding quinoa.

Quinoa is very high in fiber and very high in protein, that is only two of the 11 amazing health benefits of this beautiful grain, quinoa.It is also the easiest grain to digest, according to the World’s Healthiest Foods.

This healthy dish is one that my whole family enjoyed. I simply threw everything into a large skillet ( large for my family of 6) and that’s it… even the quinoa is cooked right in the pan. Just let all the flavors soak in.

Left overs were great too, I changed it up a bit and added spinach, squash and sweet potato on the second day ( picture is above 🙂 .
